Snap Pops and Fried Chicken

The weather in Memphis has been goregous!  I'm such a fall kinda gal... give me Razorback Football and Bonfires and I'm happy!  After dinner, I took the girls outside to play and they had Flying Turtle races!  (Let me just tell you that I think every kid should have a Flying Turtle!  We had them when we were kids, and I know countless miles were put on that thing, riding up and down Big Momma's driveway!!)  I even play on the thing now... but it's a little harder getting back up the hills than it used to be!

 The girls started getting a little bored, so Brent brought out Snap Pops!  I admit it......... I'm scared of them!  I've always thought that they could "blow" up or something!  I can see trying to explain that one at the hospital!  Silly Mommy!   Jenna and Ashley both tried to teach me how to "Snap" them in between my fingers...and I just can't bring myself to do it!  I like to just throw them!  Simple... But not MY girls....  they have to live on the edge!





We were supposed to go camping this weekend, but plans have changed and we are going to take the girls to the Zoo and Incredible Pizza!  Hopefully, the animals will be out since it's supposed to be a goregous weekend with cooler temps!  We haven't been since Aunt Carrie got married, and the girls really enjoy it!! I can't wait to see how big the Bear Cubs have gotten! 




I'm making fried chicken, mashed potatoes, green beans and rolls for supper!  My mouth is watering just thinking about it! ;)   Here is the recipe I use from One of my favorite cooking websites!

Ingredients:
1 (3 pound) whole chicken, cut into
pieces
1 cup all-purpose flour
salt to taste
ground black pepper to taste
1 teaspoon paprika
1 quart vegetable oil for frying
Directions:
1. Season chicken pieces with salt, pepper, and paprika. Roll in flour.
2. Add 1/2 to 3/4 inch oil to a large, heavy skillet. Heat to approximately 365 degrees F (185 degrees C). Place chicken pieces in hot oil. Cover, and fry until golden, turning once, 15 to 20 minutes. Drain on paper towels.


** The ONLY thing I do differently, is marinate the chicken in this for a couple of hours, before I fry it!  It makes the chicken SO moist!  We have tried almost all flavors, and this one is by far my favorite!  This is also what Brent uses when he fries turkey's!  ;)

My very first EVER Blog!

So, I decided to jump into this blogging thing!  I'm sure I won't even have any visitors, but I thought it would be nice to have a place to write stuff down that I want to remember!   I was once a member of a message board for moms (BOLU), and I found copies of the journals I had there a few weeks ago!  Journals from the time I was trying to get pregant, finding out I was having twins and all the trials of the first couple of years.  It was so much fun being able to look back at them, and actually having them printed out so I will be able to show the girls when they are older! :)






(They have grown up WAY too fast!!)

I hope this will become my safe little spot in the world, to get my feelings out!  I love to write down EVERYTHING... and I think this will be easier!  I even hope to have some followers! ;)

So, hang on... It will probably be crazy for the first couple of weeks, just like our life!  I wouldn't have it any other way! ;)

Tonight, I decided to go with something super easy for dinner!
Meatball Subs

1 pkg. frozen meatballs
1 jar Spaghetti sauce
1 pkg. Hoagie buns
2 cups Mozzarella Cheese

Place frozen meatballs in slower cooker / crockpot.  Spread Spaghetti Sauce over meatballs, and cook on low for 6 hours
When ready to serve:: Preheat Oven to 350. Split Hoagie Buns, add 3 - 4 meatballs and sauce inside buns, cover with cheese, and bake in over for 10 - 15 minutes at 350*.   

I have been watching The Real Housewives of New Jersey all day while doing laundry! I am such a sucker for reality TV and I love, love, love these women!
